The 21st publication by the Expert Panel of the Flavor and Extract Manufacturers Association (FEMA) on recent progress in the consideration of flavoring ingredients generally recognized as safe (GRAS) under the Food Additives Amendment is discussed. The substances GRAS by the FEMA Expert Panel are not considered to be food additives and are excluded from mandatory premarket approval by the Food and Drug Administration. It is reported that during a GRAS assessment of a substance, the Expert Panel evaluates a combination of relevant data, including data specific to the substance as well as data for the chemical group to which the substance belongs.
